Thereās something about brown butter that just makes you feel fancy like you really did something in that kitchen besides eat half the cookie dough (no judgment here).
When I first started baking, I thought butter was just butter. But once I learned that browning it gives you that rich, nutty, caramel flavor? Game changer. These cookies are soft in the center, slightly crispy on the edges, and smell so good youāll question if you should open a bakery.
And the best part? Theyāre simple. A little chill time in the fridge, a quick bake, and boom buttery, gooey perfection.
What Youāll Need
1 cup unsalted butter (browned and cooled slightly)
1 cup brown sugar
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups chocolate chips (mix of milk and dark for best flavor)
How to Make It
Brown your butter:
Melt the butter in a saucepan over medium heat, stirring often. Watch it closely until it turns golden and smells nutty. Pour it into a bowl and let it cool for about 10 minutes.
Mix your wet ingredients:
Add both sugars to the butter, whisk until smooth, then beat in the eggs and vanilla.
Add the dry ingredients:
In a separate bowl, mix flour, baking soda, and salt. Slowly add to your wet mixture. Stir until combined ā but donāt overmix!
Fold in the chocolate chips:
This is where the magic happens.
Chill the dough:
Cover the bowl and refrigerate the dough for about 2 hours. It helps the flavors deepen and gives the cookies that perfect chewy texture.
Scoop and bake:
Drop spoonfuls of dough onto a lined baking sheet. Bake at 350°F (175°C) for 9ā11 minutes, or until the edges are golden but the centers look soft.
Cool (if you can wait):
Let them rest for 5 minutes, then grab a glass of almond milk and enjoy warm.
